Southwest Breakfast Bake

Looking for a simple breakfast that's easy to make and has loads of flavor? This casserole can easily be assembled the night before and popped into the oven the next morning while you prepare for the day...a good idea on those crazy Sunday mornings when all you really have time for is Poptarts!

  • 6 eggs
  • 1 Tbl milk
  • 4 cups frozen hash browns
  • 1/2 roll sage flavored ground sausage
  • 1 1/2 cups cheese blend (I use cheddar and mozzarella)
  • 1/2 Roma tomato, chopped
  • 2 green onions, chopped
  • optional – a few sprigs of cilantro, minced

Cook ground sausage, set aside to cool. Beat the 6 eggs with Tablespoon of milk. Add remaining ingredients. Add sausage.

Place into a greased casserole dish and bake at 400 degrees for 60 minutes or until eggs are cooked through.

Feel free to add and subtract whatever ingredients you think are yummy! Mushrooms, bell peppers, sweet onions, left over ham from the holidays (instead of sausage), or even some bacon crumbles are all great ones that I’ve tried. Be creative and have fun!


Yields 4-6 servings
