Recipe: Peanut Butter Lovies

You're probably thinking to yourself, What is a Lovie?

A Lovie is something that a child latches onto that brings it comfort in upsetting times...like the corner of a blankie, a doll, or a teddy bear.

Today was one of those, "Is there no balm in Gilead?!?" type days and Mommy needed a Lovie...which usually ends up being food related. I know I'm not alone in this!!

So, we left the wee-ones to their own devices and concocted this little

Just watching it mix in the bowl was soothing. I'm a weirdo, I know.

1 cup butter flavored shortening (or butter)
1 cup creamy peanut butter
3/4 cup sugar
3/4 cup brown sugar
2 eggs
1 tsp vanilla
2 1/4 cups flour
1 tsp baking soda
1/2 tsp salt
1 cup each of oatmeal, coconut flakes, and semi-sweet chocolate chips

Start by mixing together the shortening, peanut butter, and both sugars until creamy.

Add eggs, one at a time. Add vanilla.

In a separate bowl, mix flour, baking soda, and salt. Slowly add to peanut butter mixture.

Mix in oatmeal and coconut. Then, with a wooden spoon, add the chocolate chips. (this is because the batter is pretty thick and might bend your mixer's attachment)

Drop rounded spoonfuls on cookie sheet and press flat with fork. Bake at 350 degrees just until tops are set and bottom is barely brown...about 8-9 minutes. Let them stand for 2 minutes before moving to wire racks to cool completely.
