Fruit and Nut Cookies

I can't take full credit for this recipe, I got it from my mother-in-law, who got it from Martha Stewart..I think. I just tweaked it a bit to make them soft and chewy. Other than chocolate chip, these are my absolute favorite cookies, ever!

2 1/4 cups flour
1 cup brown sugar
1/2 sugar
1 cup butter-flavored shortening
2 eggs
1 tsp vanilla
1 tsp baking soda
1/2 tsp salt
3/4 cup EACH of flaked coconut, dried cranberries, *chopped almonds, and *chopped pecans.

  • preheat over to 350 degress
  • whisk together flour, baking soda, and salt. set aside.
  • blend both sugars and shortening until smooth and fluffy
  • add vanilla and eggs. blend well.
  • add flour mixture
  • add last four ingredients (coconut, cranberries, and nuts)
  • bake for 8-10 minutes ...if you like soft and chewy cookies cook for 8 minutes and move them to a cooling rack 1 minute after removing the cookies from the oven.

**I buy chopped pecans and slivered almonds and then blend them individually in my food processor until I get 3/4 cup after they're chopped. This brings the flavors out better and makes them easier for the little guy to munch.**

The minute the cookies hit the cooling rack my little cookie monster begins stacking things to get to them.

It doesn't matter how hot they are, he'll do a round of hot potato and pop it into his mouth.

Even if it means he has to eat them with an open mouth and a grimace!
